Nori Carbonara

Pasta is my thing. I usually stick to somewhat classically inspired dishes but I decided to do something differently here. I’ve made a chili crunch Amatriciana in the past and this felt right up the same alley. A classic Roman pasta dish with a twist. Nori chucked in at the end to give the plate more depth of flavor and something different. I saw someone use nori powder in the omelette and it seemed like a great way to use it here. It was indeed the right move. I had some sheets of Nori being forgotten about in the back of my pantry and I blitzed them up and put them to use.
The nori disappears into the sauce a little. You don’t get overwhelmed by the taste of “seaweed.” It just gives the whole plate this deeper savory note that makes you keep going back for another forkful.

This one is as simple as any Carbonara. Roman rules still apply. Just add one step to the end.
