Half Chickens are always a good idea, here are my tricks to enhance a simple Roasted Bird
I love a half roasted chicken as much as anyone. I eat roasted Chicken at least once a week it’s such a simple, versatile, and filling go-to in my household. There are three tricks I pull to make it even more enjoyable and delicious. I believe the Chicken should be deboned then marinated and finally air dried. Not all of these are required to make a good chicken but by following even one of these steps you can up your chicken game and have all your friends and family talking about it for years to come.
The final dish can always change as chicken is so interchangeable but I feel like this particular dish just hits so close to home. This set is a crowd pleaser plus it looks great on the table as it’s swimming in a creamy green sauce with a nicely stacked salad just dancing on top.

DEBONE, MARINATE, AIR DRY
Roast Chicken skin side down in a pre-heated cast iron pan.
Till it looks like this below - remove at an internal temp of 155ºF
DILL CREAM POURED OVER CRISPY ROASTED CHICKEN
