Scallion Sauce
My fridge staple for a quick way to jazz up some rice, chicken, noodles or even eggs.
Scallion Sauce is a banger. On a lazy day when you need to level up a meal and you don’t have much time - one scoop of this and you’ve completed the mission. It’s a very simple recipe and also very scalable. Sometimes I like to triple or even quadruple this recipe so I can store a big jar of it in my fridge.
If you have ever made chili crunch then this will be easy to you. The idea here is simple- prep all our ingredients and then pour ripping hot oil over them. We let the flavors marry and perfume together nicely.
INGREDIENTS
3 - Scallions sliced and separated by greens and whites
1 - Shallot brunoise
1 - large knob Ginger brunoise
2 - Green Cardamom pods
1 - Cinnamon Stick
1 TBspn - Corriander seeds
2 TBspn - Sesame Seeds
4 oz - White Sugar
8-12 oz - Neutral Oil
COOKWARE/UTENSILS
Cutting Board
Sharp Knife
Large Flat Metal Bowl
Small sauce pot
Medium Metal Spoon
Meat Tenderizer
INSTRUCTIONS
Start by slicing your scallions- the star of the show here.
Separate the scallion white from the greens
Slice the scallions finely down the stock
Keep the knife work going and brunoise our shallots
Finally, peel the skin off your ginger knob with a spoon and brunoise
Smash your cardamom pod with the flat side of a meat tenderizer just to slightly crack it this will bring out more flavors in the final product
After finishing your knife cuts place all your fresh and dry ingredients into a large bowl, minus the oil.
Heat up the oil in the sauce pot on HIGH
Once the oil has begun to lightly smoke lets pour the hot oil all over the ingredients in the bowl
We will let it sizzle for a minute or so then begin to stir everything together
This mixture will sit for about an hour until it has cooled down then store in the fridge overnight before using. (this just helps the flavors set)
Remove the cardamom and cinnamon stick, jar up and you can use whenever!

I like to use this sauce in so many different applications.
Tossed in a burrito
Pour this over my fried eggs
Drizzled over Fried Rice, Tacos, Pizza
Mixed in with fresh noodles, soy sauce and black vinegar
Dipping for Hainanese Chicken Rice Dish
Perfect Meal Prep Sauce for Chicken/Steak + Rice
Slathered over grilled steak
Emulsified into a salad dressing
