Steam Burgers
Inspired by a bite in Portland, OR
I love when you eat something that just resonates with your soul for a long time. This is that bite- inside a little cozy French restaurant in Portland Oregon.
Canard
Portland, Oregon
Canard had a great menu, “French-bar-food” you think maybe foie gras, natural wine and some pretentious diners but sitting next to me there was a casually dressed couple who ordered 5 burgers and a an order of fries. I thought I have no choice but to order a couple- so I did just that. One for me and one for my friend Lorenzo. I felt right at home here.
Being at the “Chef’s Counter” we watched them make our whole meal. I saw the ticket ring through the machine, the cook pulled it and placed it on his rail where he then started searing our beef and steaming the burger. Within minutes it arrived, passed to us by the cook working that station. “Cheers Man.”
These steam burgers were simple, juicy and so cheesy. I never had a burger executed quite like this and I can’t stop thinking about it. They used a nice house made loaf that gets steamed with the cheese and beef patty, then garnished with mustard, raw onion and pickles. SUCH A BANGER!

Once I came home I decided I need to make this and it’s still a work in progress as most things always are but this one is great as is and can be dressed up and adjusted for the occasion. For me it’s an easy way to make burgers inside, with less mess and grease floating around. You can make a bunch of these at once or in batches and they are truly a crowd pleaser.
I was able to work with What-a-burger on this collaboration which was a dream come true for a kid who grew up in the South West of America. The video and a step by step is below!
