Trofie Verde
This is basically a Green Mac n Cheese, it’s elevated, sexy but relatable. You can replace this shape with any of your favorite pasta shapes. I chose Trofie a shape hailing from Liguira— the Ligurian city Genoa is known for creating a worldwide hit Pesto Genovese (Pesto). Trofie Verde is a spin on the classic dish and in liguiran fashion we use the pasta shape Trofie and instead of the traditional Pesto we use a green béchamel.
What is Trofie?
Let me show you!
I have a series of Pasta Classes here on Substack where I show you how to make pasta.
Expect history, dough recipes and a video showing you how to make the shape.
FLOUR + WATER PASTA DOUGH
This is great for pasta beginners who want a low entry pasta dough to get started. Additionally if you are avoiding eggs at the store due to high prices, have an allergy or are on a plant based diet-this Pasta dough is great for you.
Green Béchamel
I also call this basil béchamel. It’s so simple and delicious. Minimal ingredients, can be a great way to use up greens that are wilting in the fridge. This is what brings a dish to life.
